Ingredients:
1 16 oz refrigerated chocolate chip cookie dough
1 Tbsp rainbow sprinkles, plus more for topping
1 c mascarpone cheese
3/4 c powdered sugar
1/2 tsp vanilla extract
Directions:
1. Preheat the oven to 350. Line a baking sheet with parchment paper or silicone baking mat. Shape the cookie dough into a 9-inch round on the baking sheet. Top with 1 Tbsp sprinkles.
2. Bake until lightly browned around the edges, 15 to 20 minutes; let cool completely on the baking sheet.
3. Combine the mascarpone, powdered sugar, and vanilla and whisk until smooth. Spread on the cooled cookie, leaving a small border. Top with more sprinkles. Slide the cookie pizza onto a cutting board and cut into wedges. (10 servings)
