Fugazzi Signature Salad
Ingredients:
apple cider vinaigrette (recipe follows)
candied pecans (recipe follows)
baby spinach
crumbled gorgonzola cheese
dried apricots
dried cranberries
Directions:
Top spinach with cheese, apricots, cranberries and pecans. Toss with apple cider vinaigrette.
Apple cider vinaigrette
Ingredients:
1/2 c apple cider vinegar
1/2 c granulated sugar
1 1/2 tsp dry mustard
1 1/2 tsp onion powder
1/4 teaspoon salt
1/4 tsp ground black pepper
1 3/4 c canola oil
Directions:
Blend all ingredients except oil in a blender. With blender on the lowest setting, slowly add oil until emulsified. Chill for 30 minutes.
Candied pecans
Ingredients:
1/2 lb pecans
1/4 c brown sugar
1/4 c granulated sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 c water
Directions:
Place all ingredients in a saute pan and cook on low until sugar crystalizes and looks dry, about 15 minutes.
