Black Bean and Brown Rice Burritos

Bean 'n' Rice Burritos Recipe

Ingredients:
2 cans black beans, rinsed and drained
2 cans pinto beans, rinsed and drained
1 can diced green chiles
2 cups frozen corn, thawed
2 cups uncooked brown rice
1 pound jack cheese, shredded
salt, pepper, chile powder, cumin, garlic powder, onion powder
1 dozen extra large tortillas

Directions:
Cook brown rice (2 cups uncooked rice + 3 cups water; bring to boil, simmer for ~40 minutes) and let it cool.
Mix all ingredients in a large bowl.  Mix in seasonings to taste.
Scoop about 1 to 1 1/2 cups of mixture onto each tortilla, then fold and immediately wrap in plastic wrap. Put burritos in large ziploc freezer bag and freeze.
When it's time to reheat, heat in microwave on 60% power for about 4 minutes. Serve with salsa.
