Ingredients:
1 head romaine lettuce, finely chopped
1 package coleslaw mix
2 chicken breasts (or use rotisserie chicken)
1 cup black beans
1 cup corn
1/2 package grape tomatoes, halved
can sliced olives (2.25 oz)
2 avocados
1/2 cup cotija cheese, crumbled
1/4 cup chopped cilantro
tortilla chips or crispy tortilla strips
handful of roasted, salted pepitas
creamy cilantro dressing (or similar)
Directions:
1. Use some of the salad dressing to marinate the chicken for at least 30 minutes. Grill the chicken breasts until cooked through.
2. Combine salad ingredients (except tortilla chips/strips) in a large bowl. Pour the salad dressing (to taste) over the salad and mix well. Top with tortilla chips/strips.
